No-Chicken Kabobs w/ Pineapple and Jalapeno Sauce
INGREDIENTS
Sauce:
2 cups pineapple
2 jalapenos seeded
4 garlic cloves
4 tbsp coconut aminos
Optional but recommended: 1 tsp smoked paprika
Vegetables:
½ red pepper diced
½ yellow pepper diced
½ orange pepper diced
2 zucchini cut into large chunks
1 pound oyster mushrooms removed from core
1 pint of cherry or grape tomatoes
Smoked Chipotle to taste
3 cups cooked quinoa
INSTRUCTIONS
Prepare your sauce by combining all the sauce ingredients in a high speed blender. Blend until smooth.
Arrange an assortment of veggies and mushrooms on your skewers. Place skewers on a parchment lined baking sheet. Brush generously with sauce. Sprinkle kabobs with smoked chipotle seasoning.
Bake at 400 F for 20 minutes. Add to a bed of prepared quinoa. Top with extra sauce and chipotle seasoning if desired.
