Pistachio Bites
Pulp from 2 cups of pistachios (approximately 1.5-2 cups)
8 pitted medjool dates
2 tbsp tahini
1 tsp vanilla
¼ tsp cardamom
½ tsp cinnamon
⅛ tsp salt
¼ cup coarsely chopped pistachios or other nut of choice
Extra pistachio ground fine to coat the balls.
Combine all your ingredients except for the pistachios in a food processor. Blend until they form a dough. Add pistachios and pulse to incorporate them into the dough.
Roll dough into even balls. Roll in ground pistachios.
Enjoy!
