Sweet Dijon Pasta Salad

For the salad:

8 oz. chickpea pasta

3 cups arugula, chopped small

¼ cup fresh parsley, chopped

½ pint cherry tomatoes, halved

¼ cup red onion, diced

⅓ cup kalamata olives, pitted

For the Sweet Dijon Dressing

⅛ cup apple cider vinegar

2 tbsp Dijon mustard

¾ cup water

½ cup walnuts

5 soft Medjool dates

INSTRUCTIONS

For the salad:

Cook pasta according to package directions. Combine cooked pasta and chopped veggies in a bowl.

For the dressing:

Combine all ingredients in a high-speed blender. Blend until smooth. Add to pasta salad and mix. Enjoy!
