Carrot Cake Overnight Oats
INGREDIENTS
3/4 cup plant milk
3 tbsp date paste (see my reels)
3/4 cup rolled oats
¼ tsp cinnamon
⅛ tsp fresh ginger or ginger powder
⅛ tsp turmeric
Pinch black pepper
Pinch of cloves
Pinch of salt
1/3 cup grated carrots
⅛ cup raisins optional
¼ cup chopped walnuts
INSTRUCTIONS
Combine plant milk and date paste in your cup or bowl, mix to combine. Add oats and spices, mix to combine. Add grated carrots and mix again. Optionally add raisins and mix. Cover and refrigerate for minimum 2 hours. The longer they sit the thicker they will be.Top with chopped walnuts. Optionally drizzle with date paste.
