High Protein Crème Brûlée Chia Pudding Recipe (serves 1)
Ingredients:
1/2 cup milk
1 egg yolk
1 tsp cornstarch
1 scoop vanilla protein powder (with additional milk to make slurry)
2 tbsp chia seeds
Salt (optional)
Caster sugar (sprinkled on top to make toffee layer)
Directions:
1. Add milk, yolk and cornstarch to a pan (medium heat) and stir until thickened (about 5 mins)
2. Take off heat and then add protein powder slurry (sieve for a smoother textured custard), chia seeds and salt and place back on stove for a further 2 mins.
3. Pour into a jar and let it set. (About 1-2 hours or overnight if you prefer)
4. Add caster sugar and use torch to make toffee layer.
Also this would pair beautifully with strawberries for added fibre and freshness.
