Ingredients:

1.75 cups almond milk or any vegan milk
1/4 cup sugar
1 tsp vanilla extract
3 tbsp cornstarch
2 tbsp lemon juice
3.5 tbsp refined coconut oil, melted
Pinch of salt
Sugar (for the brûlée topping)

Instructions:

- Prepare the Base: In a saucepan, whisk together almond milk, sugar, vanilla, cornstarch, lemon juice, coconut oil, and a pinch of salt until smooth.
- Cook the Mixture: Place the saucepan over medium-high heat and stir continuously until it thickens to a creamy consistency. This should take about 5–7 minutes.
- Chill: Pour the mixture into ramekins and let them cool to room temperature. Cover and refrigerate for at least 2 hours, or until firm.
- Create the Caramelized Top: Sprinkle a thin layer of sugar over each ramekin. Place them under the broiler for 2-3 minutes, or until the sugar melts and forms a golden, crispy layer. Watch closely to avoid burning.
- Serve: Let the sugar topping harden for a minute, then serve immediately.
