Cremas Crème Brûlée!
2 cups heavy cream
1/4 vanilla extract
1/8 tsp salt
Whisk on medium heat until bubbly but not boiling. Whisk together 2-4 egg yolks with 1/4 cup of sugar until creamy. Then slowly add in hot heavy cream by whisking or mixing with a spoon.
Add in Cremas to the custard as a final step and mix until thoroughly blended.
Add custard to ramekin and place in a baking dish with boiling hot water 3/4 of the way. bake on 325 for 35 minutes until the center is wobbly and the outer layer is firm. Then place in the refrigerator for at least one hour.
Prepare the glaze by sprinkling sugar on time and using a kitchen torch.
Or prepare a glaze by adding 1/2 cup of sugar to a saucepan. Add 3 tablespoons of water and 1/4 tsp of honey. Let cook on medium heat for 8 minutes until amber golden brown. Drizzle glaze on custard and allow to sit until hardened. Top with fruit and voila !!
