Ingredients: Cooked basmati rice, coconut milk, curry paste, mixed vegetables (bell peppers, peas, carrots), tofu or chickpeas.
Method: Sauté vegetables, add coconut milk, curry paste, and cooked rice. Simmer until flavors meld.
