Growing up an Italian household, bocconcini (little mozzarella) balls were a staple. Being the fussy eater that I was I never really enjoyed them in my younger years. It was only later on in life that i learned to appreciate these little delicacies.

Finding a vegan version has proved difficult. So when I saw Francesca’s version (@plantifullybased ) I knew I had to try them.
Her trick is to brine the tofu overnight which softens the tofu and infuses it with the salty taste you have been missing.

After the brining process , I added extra virgin olive oil, red pepper flakes and fresh basil.
If you have been missing fresh vegan mozzarella you NEED to try this recipe!

This batch was a huge hit with vegans and non-vegans alike.

Now take into account that this is tofu and it is not going to be exactly like fresh mozzarella, but I think you will truly be surprised at how delicious these are
