Blueberry Chia Layer
1 cup frozen blueberries
1 cup plant milk
2-3 pitted medjool dates
½ tsp vanilla extract
6 tbsp chia seeds
Mango Layer
1 large mango, divided
Directions:
Prepare the Blueberry Layer:
Add the frozen blueberries, plant milk, dates, and vanilla extract to a blender. Blend until smooth. Mix in the chia seeds. Let set in the fridge until you’re ready to assemble the cup.
Prepare Mango layer
Blend ¾ of the mango into a puree. Chop ¼ of the mango into small pieces.
Put it together:
Add blueberry layer, then add mango puree and chopped mango, then more blueberry, then more mango puree and chopped mango. Chill for 15 minutes. Enjoy!
