Banana Chocolate Chip Baked Oats

Recipe:

1 cup rolled oats
1 ripe banana
1/2 cup plant milk
1/4 cup nut butter (or seed butter for nut-free)
3 pitted medjool dates
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/2 cup date sweetened chocolate chips

Combine all the ingredients (except chocolate chips) in a blender. Blend until smooth. Fold in the chocolate chips, then add batter to a parchment lined 6” pan. Bake at 350 F for 23-25 minutes or until firm to touch.
