Tofu Cold Noodles
for the tofu:
200g firm plain tofu (7oz)
1 tbsp flour
1 tbsp veg oil for the pan
1 tbsp soy sauce
1 tbsp white wine vinegar
1 tbsp ketchup
optional add 1-2 tsp vegan worcestershire sauce
optional 1-2 tsp sesame seeds
1 serving cooked noodles
→ I did 200g fresh packaged udon noodles,
which translates to 75-100g dry noodles! Sub with rice noodles, glass noodles, soba etc
For the dressing:
1 ½ tbsp soy sauce
1 ½ tbsp white wine vinegar
1 ½ tbsp olive oil
1 ½ tbsp agave
1 ½ tbsp roasted sesame seeds
also:
½ cucumber, cut into noodles
1 spring onion finely chopped
optional: a sprinkle of chili flakes
