Try roasting beets for a tender and rich treat - they taste completely different than the raw or boiled beets that you might be accustomed to.

Ingredients :
- Head of lettuce
- 2 bunches of beets
- 2 blood oranges
- Creamy plant-based cheese
- 5 figs
- Red wine vinaigrette
- 1 Tsp sumac
- Basil
Instructions:
1. Preheat the oven to 350°, wrap each beet in tinfoil with a little bit of olive oil. Bake for 40 minutes or until fork, tender. Let the beets cool, using a paper towel wipe off the skin and chopped to bite-size pieces.
2. Tear the lettuce leaves, removing the hard stem and segment the oranges.
3. Build the salad, adding the rest of the ingredients. Enjoy
