I had an eggplant sitting around for a couple of days. Today I was determined to make something with it. I was going to fry it but I decided to make this easy , delicious, one pan Zaalouk instead. I have eaten this out in restaurants many times, but it was my first attempt making it at home. Next time I will definitely make a larger batch for meal prep as I think the flavors will come out even more over a few days.
Zaalouk
INGREDIENTS:
2 tbsp olive oil
2 tbsp garlic paste
1 large eggplant, peeled and chopped
4 plum tomatoes, chopped
1 tbsp paprika
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp cayenne pepper
1 tbsp sumac
2 tbsp tomato paste
1/4 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
1/2 lemon
salt to taste
Heat a medium frying pan over medium high heat. Add the oil. Add the garlic and stir for a few seconds. Add the eggplant and sauté for about 2 minutes. Add the tomatoes, spices and tomato paste. Cook for another 2-3 minutes. Cover the pan , Lower the flame to medium-low and simmer for about 20 -25 minutes. Add the parsley & cilantro and lemon juice . Using a potato masher or spatula, break up the larger pieces. Taste add salt to taste , cover and cook about 5 minutes more.
This dish stays very well in the refrigerator for a few days and would be perfect for meal prep.
