Mulberry Compote

Ingredients:
• Mulberries: 2 cups
• Water: 1/4 cup (plus 3 tablespoons for slurry)
• Cornstarch: 1 tablespoon
• Star anise: 2-3 pieces
• Brown sugar: 1 tablespoon
• Lemon juice: 1/2 lemon

Method:
1. Dry roast the star anise in a hot pan until aromatic.
2. Add 1/4 cup of water to the pan, followed by the mulberries and brown sugar.
3. Muddle the mulberries lightly to release their juices.
4. Bring the mixture to a boil over medium heat.
5. In a separate bowl, mix the cornstarch with 3 tablespoons of water to form a slurry.
6. Add the cornstarch slurry to the boiling mulberry mixture.
7. Stir continuously and bring it to a boil until it thickens and coats the back of a spoon.
8. Squeeze in the juice of half a lemon and mix well.
9. Allow the compote to cool down completely.
10. Store in an airtight container in the refrigerator.
