It is essential to draw out the moisture from your eggplants in order to enhance their flavor. This can be achieved by salting them and letting them rest for at least 10 to 15 minutes, although longer is preferable. Afterward, wipe them clean with a dry paper towel and coat them in Mina olive oil before baking them at 400° until they turn a golden brown color.
Alternatively, you can deep fry your eggplants, but I am currently watching my figure and prefer the healthier baking method.
