Vegan No Chick’n
3 cups of Lions Mane (measured after broken into small pieces)
2 tbls coconut aminos
2 tsp garlic granules
2 tsp paprika
1 tsp onion granules
½ tsp smoked paprika
1 tsp dried oregano
1 tsp cumin powder
Optional: ½ tsp salt or to taste
Heat well-seasoned cast iron to medium-high heat. Add mushrooms. Once most of the water has cooked off, add coconut aminos and spice mixture and continue to cook for 2-3 minutes.
Assembling the bowl:
Cook quinoa and add to a large bowl.
Top with veggie no chick’n, guacamole, corn, tomatoes, lettuce or your choice of veggies.
Pour HV cheese sauce or HV Sour Cream on top.
Enjoy!
