Pumpkin Fritters ✨

Just simple ingredients turned into some easy pumpkin fritters, that are crispy on the outside and tender on the inside.

Ingredients:
200 g pumpkin (7 oz)
4 tbsp four
1 spring onion (or other type)
Salt and pepper to taste
2 tbsp parmesan cheese
Olive oil for frying

Optional additions:
Sage
Nutmeg
Paprika
Garlic powder
Fresh parsley
Chives

Instructions:
1. Grate fresh pumpkin and add it to a mixing bowl.
2. Add flour, finely chopped spring onions, salt and your preferred spices (e.g. pepper, paprika, dry sage, nutmeg). You can also add a bit of parmesan cheese if you like.
3. Stir the mixture until all ingredients are well combined and form a batter.
4. Heat a little oil in a frying pan over medium heat.
5. Scoop spoonfuls of the batter into the pan, pressing each to flatten. The thinner they are, the crunchier they will be.
6. Fry the pumpkin fritters for 3-4 minutes per side, or until golden and crispy on the outside and tender on the inside.
7. Serve hot and enjoy!
