Crispy parmesan egg✨
For the Eggs:▪️2 tsp Olive Oil▪️2 Eggs▪️1/4 Cup Grated Parmesan (2 Tbsp per egg)▪️Salt & Pepper▪️
For the Salad:▪️Baby Arugula▪️Shaved Parmesan▪️Fresh Lemon Juice▪️Olive Oil▪️Salt & Pepper▪️
1️⃣ Preheat a nonstick pan over medium heat and drizzle with olive oil
2️⃣ Cook the eggs sunny side up one at a time until the white is almost fully set, then sprinkle 2 Tbsp Parmesan around the perimeter and turn off the heat
3️⃣ Let the cheese cook until it’s golden brown underneath (1-2 mins), then carefully remove from the pan
4️⃣ Toss the arugula and shaved parm in lemon juice, olive oil, salt, and pepper to taste and serve with the eggs on top - enjoy!
