CRISPY CARROTS FRIES WITH BASIL CASHEW CREAM!

These tastiest carrots with an ADDICTIVE basil cashew cream!

For the carrots:
1 1/2 lb carrots, trimmed & cut into “fries”
2-2 1/2 tbsp olive oil
1 tbsp arrowroot starch or cornstarch
3/4 tsp salt
1 tsp dried oregano
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika

For the cashew cream:
3/4 cup raw cashews
1/2 cup fresh basil
6 tbsp boiling water
1 tbsp lemon juice
1/2 tbsp minced garlic
1 tsp honey
1/2 tsp salt
1/4 tsp pepper

For the toppings:
Pine nuts, toasted
Chopped fresh basil
Chopped dates

1️⃣Preheat the oven to 425. 2️⃣Make the spice mixture. Add the arrowroot, salt, oregano, cumin, garlic powder and paprika. Mix together to combine. 3️⃣Add the carrots to a sheet pan, then add the oil and the spice mixture. Toss to combine. Place them in the oven for 35-40 minutes until crisp. Toss a couple times throughout. 4️⃣While the carrots roast, make the cashew cream. Add the cashews, basil, boiling water, lemon juice, garlic, honey, salt and pepper to a high speed blender. Blend until smooth. 5️⃣To serve, spread a layer of the cashew cream onto a plate, top with the carrots, then the pine nuts, basil and the dates.
