Lunch Cake Recipe:
1 1/4 cups (2 1/2 sticks) salted butter(softened)
2 tablespoons vegetable oil
1 3/4 cups granulated sugar
6 large eggs
1 tablespoon mixed essence or vanilla extract
1 teaspoon almond extract
3 cups all purpose flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 tablespoon lemon zest
1/2 cup buttermilk
Red & Green gel food coloring
Bake at 350° F for 50 minutes
Yield: 1-9” square cake
Icing:
3 cups powdered sugar
1/4 cup hot water
1/2 teaspoon almond extract
