Serves 2
Tofu:
250g firm organic tofu, pressed
Juice from ½ lime
1-2 tbsp olive oil
½ tsp cumin
¼ tsp chilli powder
½ tsp paprika
½ tsp garlic powder
Pinch of salt and pepper
Avocado dressing:
1 ripe avocado
¼ cup coconut yogurt
Juice from 1 lime
Pinch of salt
Pinch of pepper
Dash of maple syrup
½ tsp garlic powder
Water to thin
Other:
2 handfuls lettuce, chopped
10 cherry tomatoes, halved
1 can black beans, drained and rinsed
1 can corn, drained and rinsed
¼ red onion, diced
1. Dice the tofu into cubes and add to a bowl. Add the oil, lime and spices and toss to combine
2. Add the tofu to your air fryer at 180c for 15-18 minutes until golden. Temp and time may vary.
3. Add the dressing ingredients to a blender and blend until smooth (or mash by hand).
4. Add everything to a bowl and top with the dressing and enjoy.
