Kao Fu (Braised Wheat Gluten) Recipe
A well known Shanghainese vegetarian dish. This is often served as a cold appetizer. For this recipe we made a much larger portion for our lunar new year eve dinner.
INGREDIENTS
- 800g Wheat gluten
- 300g Dried black mushrooms
- 300g Dried black fungus
- 300g Dried lily flower
- 3 pieces Fresh bamboo shoots (or canned)
- 5 tbsp Avocado oil
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 2 tbsp sesame oil
- 2 stalks of green onion
- water
PREP
- Wash and then soak all the dried ingredients (make sure to squeeze out the water once done)
- For mushrooms cut the stems off and if the pieces are too big cut in 1/2.
- For flower only cut the hard ends off
- For black fungus cut into smaller pieces
- Cut the bamboo
- Pull apart the wheat gluten by hand
COOKING
1. Put 3 tbsp avocado oil in the pan and fry the wheat gluten for about 20 minutes. Take off of stove.
2. Using the same pot, Add 2 tbsp avocado oil, and green onion stalks cut in half. Add in the wheat gluten, bamboo, mushroom, yellow mushroom, black fungus, and bamboo shoots.
3. Mix and add soy sauce, brown sugar and 500 ml water. Mix again.
4. Cover for 15minutes.
5. Mix it all together.
6. Leave uncovered and cook 5 minutes. (Sauce should be completely gone)
7. And then done. You can actually eat it warm too. But you can refrigerate and then serve.
For smaller portion, reduce ingredients and use soy sauce to taste. We went on the lighter side for the soy sauce.
