Ep.13 [K-FOOD] Rice Cake Soup (Tteokguk)
Chef Ryan shares with us how to make tteokguk, or a rice cake soup to celebrate the New Year. Thin slices or rice cakes are cooked in a milky beef broth and garnished with various toppings, such as julienned egg omelet, chopped scallions, red chili slices and seasoned laver strips. Try making this hearty and comforting soup for your loved ones to ring in the new year for a fresh start.
[Ingredients]
200g Rice cakes
100g Beef
1 Egg
3 Scallions
4 Garlic cloves
2 Small laver sheets
1 Red chili
1/2T Soy sauce
1/2T Fish sauce
1/2T Sesame oil
1/2t Pepper
Pinch of Salt
[Directions]
1. Cut 100g of beef into smaller pieces. Heat 1/2T of sesame oil in a pan and brown the beef.
2. Add 4 cups of water, 4 sliced garlic cloves, and 1/2t of pepper. Bring to a boil on high heat for 5 min. Skim the top occasionally to remove any impurities. Switch to medium heat and simmer for 25 min.
3. For toppings, chop 3 scallions and 1 red chili, and cut 2 small laver sheets into strips. Lightly beat an egg with a pinch of salt, add 1t of cooking oil to a pan over high heat. Pan-fry the egg into a thin omelet with the heat off. Roll up and cut into thin strips.
4. Add 200g of rinsed rice cakes, 1/2T of soy sauce and 1/2T of fish sauce to the broth. Add more salt for salinity. Cook for another 5 min on medium heat.
5. Ladle the soup into a bowl and garnish with the egg strips, laver strips, chopped scallions and red chili slices.
