If you’re a coffee lover, you’re going to absolutely love this icecream. It’s airy, light, sweet & the perfect caffeine fix. Let’s make this.

1/4 cup instant coffee
1/4 cup sugar
1/4 cup hot water
200 ml whipping cream
200 ml condensed milk
Blitz the coffee, sugar & water together in a stand mixer/using an electric whisk or manually till airy & frothy. This should take about 5 minutes.
In a separate bowl, beat the cream till it forms soft peaks. Add in the condensed milk & beat for 2 minutes again. Add in the coffee mixture & fold it gently. Now add this to your mould & cover the top with a cling wrap touching the base of the icecream to avoid forming ice crystals. Freeze it for 4-5 hours or overnight. Scoop out into bowls or waffle cones. Serve immediately & dig in.!
