This is day 2 of Veganuary. This month, I will share my vegan (mostly) Vietnamese recipes and show you how vegan food is simply delicious food.

These crepes, also known as bánh xèo chay, are one of Vietnam’s many delightful street foods. When served with a dipping sauce and wrapped in greens, it becomes the perfect blend of Vietnamese tastes and textures: sweet and savory, soft and crunchy, and fresh and fried.
