Today’s #meatlessmonday recipe is my Vegetarian & Gluten-Free POLENTA BOWL! Did you know that polenta is gluten-free?
Serves 4-6
Ingredients:
1 ½ lbs grape tomatoes
10-12 garlic cloves
4 tbsp olive oil
2 tsp fresh oregano or 1 tsp dried oregano
1 ¼ tsp salt
½ tsp pepper
½ cup fresh basil
4 ounces fresh spinach
1 can cannellini beans, drained and rinsed
1 ½ cup instant polenta (I used Colavita)
3 cups milk (I used 2% lactose free milk)
2 tbsp butter
4-6 eggs
Hot sauce (optional)
-Preheat oven to 400F
-To a 13x9 casserole dish, add tomatoes, garlic, 3 tbsp olive oil, ¾ tsp salt, ¼ tsp pepper and all the oregano.
-Toss well and roast for 30 minutes.
-Add spinach and basil and mix until the greens have wilted.
-Add cannellini beans, mix and set aside.
-To a medium sized pot add 3 cups water, 3 cups milk, 2 tbsp butter, ½ tsp salt and ¼ tsp pepper. Mix well and bring to boil.
-Once the liquid is boiling, begin to whisk the liquid and stream in the polenta. Continue whisking for a minute more, then reduce to a simmer. Let simmer for 10 minutes, whisking occasionally.
-To a large pan add one tbsp olive oil and cook over medium heat. Once the oil is warm, add the eggs and cook to your liking.
-Plate polenta with pan fried egg, veggies, and hot sauce.
