Tofu Time - Season 2, Ep 3: Super Firm Tofu

It's Tofu Time! This is a series covering the different types of tofu and how to cook with them. In today's recipe, we'll highlight super firm tofu. This type of tofu has been pressed of most of its water content, resulting in a dense and firm tofu block.

For maximum flavor absorption and textural contrast, I like to score a diamond pattern across the surface of the tofu block. It also looks pretty cool.
