Chipotle Pollo:
1 1/2 lbs chicken thighs
2 tbsp unsalted butter
1 1/2 cups chicken stock
1/2 cup heavy cream
1/4 cup chipotles in adobo
3 garlic cloves minced
1 medium yellow onion medium dice
1/2 tsp Mexican oregano
Salt and pepper to taste
Garnish with cilantro and a squeeze of lime
Serve with white rice or fresh tortillas
