These peanut butter “finger” bars are one of Grandma’s best recipes! #shorts

My grandma always had some of these peanut butter finger bars in her freezer. It’s no wonder I loved to go over to her house so often while growing up!

INGREDIENTS

For the bars:

- 1/2 cup unsalted butter room temperature
- 1/2 cup white granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1/3 cup peanut butter
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup rolled oats
- 6 oz semi-sweet chocolate chips

For the glaze:

- 1/2 cup powdered sugar
- 1/4 cup peanut butter
- 3-5 tbsp heavy cream

INSTRUCTIONS

1. Preheat oven to 350°F.
2. In the bowl of a stand mixer, or by hand, cream the butter and sugars until light and fluffy, 4 minutes.
3. Scrape the bowl and add the egg, peanut butter, baking soda, salt, and vanilla. Mix to incorporate, 2 minutes.
4. Add flour and rolled oats. Mix until no streaks of flour remain, 1 minute.
5. Spray a 9×13 baking pan with nonstick spray and spread batter evenly to the corners and sides.
6. Bake until the edges are set and the center soft, 18-23 minutes.
7. While the bars are baking, prepare the peanut butter glaze. In a small bowl, mix the powdered sugar, peanut butter, and cream. Whisk until smooth and the mixture is thickened, but runny, making ribbons on itself. Set aside until ready to use.
8. When the bars are finished baking, remove from the oven and sprinkle with the chocolate chips. Let the chocolate chips melt for 5 minutes then spread evenly over the bars.
9. Drizzle the prepared peanut butter glaze over the chocolate and spread with an offset spatula slightly mixing the glaze and chocolate. Allow the chocolate and glaze to set before cutting, 2 hours.
10. Cut into "finger" sized bars and enjoy!
