Ingredients
- 1 cup simple syrup (equal parts water and sugar)
- 1 1/4 cup lemon juice, freshly squeezed (about 6-8 lemons)
- 2 cups cold water
- 2 large mangoes, peeled and diced
- 2 tbsp sugar (for mango purée)
- 1 tbsp water (for mango purée)
- 1/2 cup dragon fruit, diced
- 2 tbsp water (for dragon fruit blend)
- Ice (for serving)
Instructions
- In a medium saucepan pan combine sugar and water of medium heat and stir until well combined and sugar dissolves. Remove from heat and set aside.
- In a blender, combine the diced mango, 2 tbsp sugar, and 1 tbsp water. Blend until smooth. Set aside.
- In cleaned blender, blend the dragon fruit with 2 tbsp water until smooth. You can strain it if you prefer a smoother texture.
- In a large pitcher, combine the mango purée, lemon juice, water, simple syrup and ice. Add dragonfruit blend and mix until well combined. Taste and adjust sweetness or tartness as needed.
