Save those $8 you spend on coffee or breakfast and put it towards the Grounds App membership (only $8.33/mo). This recipe is so close to the Starbucks version, and is easy to make at home! These are low calorie/high protein and store easily in the fridge for a few days or you can freeze and they taste just as good reheated!
Here's Copycat Starbucks Egg White Bites.
DIRECTIONS:
-Preheat Oven to 300 degrees F
-Place a Baking Dish filled with 1 inch water on the bottom rack (this subs as your sous vide method)
-Mix in a blender the following:
- 2 cups eggs (about 8 eggs) - I did egg whites but included 4 egg yolks as the yolk to increase the nutritional profile of these. Egg yolks contain essential nutrients such as calcium, phosphorous, , zinc, vitamins B1, B12, A,E,D, and K) and make up 60% of total daily choline
-2/3 cup cottage cheese
-1/2 cup shredded cheese (I used Monterey)
-Salt & Pepper
-BLEND & pour into Muffin Pan 2/3 way full
-Chop of Roasted Red Peppers & Spinach & add to the top of each of your egg bites
-Bake for 25-30 minutes
If made using the same ingredients as shown:
1 egg bite = 7 protein, 1 carb, 4 fat
