Shaved Brussel Sprouts Salad

If you’re looking for an amazing holiday or fall inspired salad, this is one simple but ridiculously good combo. Perfect for thanksgiving or a holiday party. Its got plenty of crunch, and it all comes together with a simple homemade dressing with a hint of maple that makes it so good.

Here is how I made it:

1. Grab a large salad bowl and add 12oz of super thinly shredded Brussel sprouts. These need to be shaved really thinly, as you dont want to get too much in one bite. This step is critical - otherwise, it won’t work.

2. We’re bringing some sweet fruit into the mix. Thinly cube 1 large honey crisp apple and add to the salad bowl, along with 1 large pomegranate.

3. Thinly slice 3 scallions - the green and white parts, and add to the bowl.

4. Add some personality by roughly chopping 1/3 to 1/2 cup of toasted pecans and add to the salad with 4-5oz of freshly shredded manchego cheese.

5. For the dressing, mix together 5 tbsp olive oil, 3 tbsp apple cider vinegar, 2 tbsp dijon mustard, 2 tbsp maple syrup, 2 minced garlic cloves or 1/2 tbsp garlic powder, and a couple pinches of salt and fresh cracked pepper. Give it a taste, and adjust as you wish.

6. Toss everything together, and enjoy.

Top with more freshly grated or freshly shredded manchego cheese before serving.
