Recipe:
Add salmon fillets to a saucepan along with shallots, lemons, black peppercorn and dill. Cover with oil and poach at low heat for 15mins. Leave to cool down in the fridge. Add the poached salmon to bowl along with smoked salmon, chopped dill, chives, creme fraiche, mayo, lemon zest and lemon juice. Season with salt and lemon juice. Top with salmon roe and herbs. Serve with toasted bread.
