Roasted Cauliflower & Butter Bean Hummus Bowl

Butter bean hummus:
400g can butter beans, drained and rinsed
1 tbsp olive oil
Pinch of salt and pepper
Juice from 1 lemon
1/4-1/3 cup tahini
1/2 tsp smoked paprika
1/2 tsp garlic powder
Water to thin if needed (I used around 1-2 tbsp)

Cauliflower:
1 head of cauliflower cut into smaller pieces
1 small red onion, sliced
Drizzle of olive oil
1 tsp onion powder
1 tsp garlic powder
2 tsp cumin
1 tsp smoked paprika
Pinch of salt and pepper

Other:
Curly parsley, chopped
Pomegranate seeds
Sesame seeds

Preheat oven to 200°C/390°F. Add the cauliflower and onion on a lined baking tray and add the olive oil and seasonings. Toss to coat. Bake for 35 minutes or until golden.

In the meantime, add the hummus ingredients to a blender or food processor and blend until smooth and creamy.

Add the hummus to a bowl, then the parsley, cauliflower/onion, pomegranate and sesame seeds. Enjoy!
