Growing up in Mexico, calabacita (squash) was always on the table. Today, I’m roasting Mexican squash until golden and tender, then drizzling it with a delicious sauce made from roasted red jalapeño, garlic, soy sauce, water, and vegetarian hoisin sauce.
Once golden brown, I transfer it to a mixing cup, adding more soy sauce, green onions, agave, lime juice, vegetarian hoisin sauce, and gochugaru. Mix it all together for the perfect flavor boost.
