Yesterday’s veggie rescue was all about Leeks. So the first dish that I made was this simple yet delicious pasta that uses the whole leek and a few simple ingredients. Here’s what I used:
2 large leeks
3 tablespoons vegan butter
3 tablespoons all purpose flour
2 cups milk
1/2 lemon
Salt and pepper to taste
Spaghetti
Parmesan
Wash and cut the leeks into three.
Slice the green tops thinly into strips.
Put into boiling water to blanch for 30secs. Transfer into and ice bath. Set aside.
Cut the white parts of the leeks thinly.
Heat the butter and sauté it for 5-7 mins.
Meanwhile boil your spaghetti until al dente.
Add flour to the leeks and stir well. Gradually add the milk, stirring well.
Season with salt and pepper, then squeeze the lemon juice into the sauce.
Transfer the pasta into the sauce and add the green parts of the leek.
Reduce the heat and stir till everything is combined.
Serve with parmesan. Enjoy!!
