Adas polo is an amazingly delicious Persian lentil rice that is topped with raisins, dates and barberries. Easy to make, this recipe can be made vegan or with meats. It is great for both weeknights or festive times.

Adas polo is a traditional Persian lentil rice that is popular in Iran. It is made with a rice crust (tahdig), but you may also try using potato wedges, bread slices or lavash to make the crust.

Ingredients:
3 cups rice
salt
1½ cups green lentils
vegetable oil
¼ cup butter
a pinch of ground saffron

Minced Beef Mixture:
1 onion, finely chopped
500 g minced beef
1 tsp cinnamon powder
2 tsp turmeric powder
½ tsp black pepper powder
1 tsp salt
a pinch of ground saffron
2 tbsp tomato paste

Garnish:
¼ cup butter
1 cup black raisins

To cook this extremely delicious dish, first we put the lentils in water the night before, then we cook the rice with lentils and salt so that the rice remains a little raw. If the lentils are still hard, it is better to cook them separately and then add them to the rice.
After cooking rice and lentils and draining them, we pour saffron into the pot with oil. I put sesame seeds and thinly sliced ​​potatoes in the pot for tahdig, which was really wonderful.
Then I poured layers of rice, lentils and saffron on it and put it on a gentle flame to cook.
I fried some onions in the pan and added meat, spices and tomato paste to it. And finally, I fried the raisins with butter in the pan.
The combination of lentil,meat, rice and raisins is amazing, but this dish can be eaten without meat and as a vegetarian dish.
