OLD fashioned BREAD pudding in the AIRFRYER

finally I've got round to making Bread Pudding, many of you said pleeeease make it and I'll be honest - it was a bit daunting being so fondly remembered by many of you including Al! My Mum despite being an Eastender, never made it, I've no idea why - possibly she simply didn't like it.

I am glad I gave it a go and feel the airfryers did well with this pudding, lovely caramelised crunch on the outside and soft and fruity on the inside. Delicious with cream and would do well paired up with custard or ice cream.

500g white bread, torn into pieces  £1              
   (with or without crusts)
150g light brown sugar    29p
   (white sugar is fine if no brown sugar)
400g mixed dried fruit   £1.27
2 tbsp (or more) mixed spice   18p
2 large eggs, beaten   46p
600ml whole milk  88p
(no need to reduce milk if using butter, 
feel the pudding could easily take the extra fluid)
100g melted butter (optional)  (I used 50g) 43p   
demerara sugar to sprinkle on top  6p

Total cost: £4.57 or £1.52 per pud

Line tins with parchment paper.  

Tear up the bread into a large mixing bowl and add the milk.  Squish down and let the milk soak for a few minutes (longer if using crusts) While bread/milk soaks, melt the butter and beat the eggs.  
The bread/milk mixture may need stirring/bashing about to help break down the bread, a stodgy mixture is what you are looking for.  Add all the other ingredients and mix until thoroughly combined.  
Pour into your prepared tins, and pop into AF on BAKE setting 160c/320f (oven: 170c fan/190c/gas mark 5)
Bake for about 30 to 45 mins depending on size of basket/AF etc.  Once cooked (clear cocktail stick or 98c temp)
Leave to cool (you may need to flip and cook bottom if using an AF with top only element) before enjoying with cream/custard or ice cream.  Can be frozen (defrost before reheating) and can be kept in the fridge for 5 - 6 days.
