If you still have leftover festive bread from the Christmas celebration, you can turn it into this delicious tres leche bread pudding. Every bite of this creamy custard pudding is filled with fresh fruit, a hint of warm cinnamon, and vanilla, which is further enhanced with a sweet citrus sauce. I made a huge batch of it for brunch and my family and guests enjoyed it.
I have a delicious sauce recipe for bread pudding but it is a rich sauce. Since this bread was already rich on its own and then we poured the custard over it, I wanted to keep the citrus sauce simple. That is why I paired it with a simple sauce that has no further egg yolks or sugar.
Festive Tres Leche Bread Pudding with Creamy Citrus Sauce from MEK

4 cups (485 g) of panettone brioche, cubed
1 ½ cups whole milk
½ cup heavy whipping cream
⅓ cup sweetened condensed milk
4 eggs
1 tsp pure vanilla
1 tsp cinnamon or pumpkin pie spice
½ cup cranberries
½ cup fresh blueberries
1 cup diced apples
¼ cup slivered almonds
2 tbsp butter, in small pieces.
For the orange sauce:
1 cup orange juice
2 tbsp cornstarch
Vanilla
1 tbsp butter
Heat the oven to 325 F.
Dice the bread into cubes. Transfer the cubes to a 9/13-inch greased baking dish. Sprinkle the fresh berries and diced apples over it.
Combine eggs, three milks, vanilla, and cinnamon in another bowl and whisk it well. Pour this mixture over the bread and fruits evenly. Now sprinkle the almonds over it. Top the surface of it with dollops of butter. Transfer the dish to the 325 F pre-heated oven and bake for 35 minutes.
At the end of its baking time, you can broil for two minutes if you want some nice golden color on top but it's optional.
Whisk together orange juice and cornstarch. Pour it into a saucepan and heat it whisking continuously till it coats the back of a spoon. Then remove from heat and add vanilla and butter to it. Whisk it and transfer it to a gravy dish.
Slice the tres leche bread pudding into squares and serve it with a drizzle of the warm sauce, a dust of powdered sugar, and garnish with fresh berries. May it be healthy for you, enjoy!
