Lemon Kurd

450 g of lemons
4 whole eggs
1 yolk
225 grams of sugar
80 grams of butter

STEP 1
From the lemons, cut a thin layer of peel using a grater and squeeze the juice using a fork or a citrus press. Strain the juice through a fine sieve. About 150 ml of juice should come out.

STEP 2
Melt the butter in a water bath, and when it melts, add the zest and sugar. Mix well.

STEP 3
In a deep bowl, combine eggs and egg yolks. Stir the mixture to a homogeneous consistency using a whisk. Pour the eggs into the butter-sugar mixture.

STEP 4
Mix and add lemon juice. Put the bowl in a water bath and brew the cream, stirring constantly. Cook the cream until it thickens and acquires the consistency of thick sour cream. Pour the hot cream into regular or pre-sterilized jars.
