these mini cinnamon sugar pumpkin pie pumpkin bites are gluten free, dairy free, and refined sugar free, and perfect for thanksgiving! recipe below.

pumpkin bites:
•1/2 cup nut butter (almond and cashew butter are delicious — peanut butter works too)
•3 tbsp pure pumpkin purée
•3 tbsp pure maple syrup (or raw honey)
•1 tsp pure vanilla extract
•1/2 tsp salt (use 1/4 tsp if using a salted nut butter)
•1 tsp pumpkin pie spice/pumpkin spice
•3/4 cup almond flour

cinnamon sugar coating:
•2 tbsp coconut sugar
•1 1/2 tsp cinnamon

other ingredients:
•dark, semi-sweet or unsweetened chocolate chips (i use dairy free and refined sugar free)

instructions:
1. first make the pumpkin bites: mix together the wet ingredients in a bowl then add in the dry ingredients. mix everything together until a firm dough forms. if the dough is too dry, add more pumpkin purée or nut butter. if it’s too wet, add more almond flour.
2. scoop the dough with a cookie dough scoop and roll into balls using the palms of your hands then place on a tray lined with parchment paper.
3. next, mix together the cinnamon sugar mixture in a separate bowl. coat each pumpkin ball in the cinnamon sugar mixture then return to the tray.
4. use a piece of kitchen twine to create 4 indents across the top of each pumpkin bites then top each one with a chocolate chip.
5. place the pumpkin bites in the fridge for at least an hour to harden, then dig in and enjoy! store leftovers in a sealed container in the fridge.
