Ingredients for the dinner recipe:
3 pounds chicken thighs, boneless and skinless
1 tsp ground paprika
4 eggplants, cubed
Salt and pepper, to taste
Buffalo sauce and ranch dressing
Preheat oven to 400° and line baking sheet with parchment paper and coat lightly with cooking spray. Either grill chicken OR arrange chicken thighs on baking sheet and sprinkle with paprika and fill in the rest of the sheet with the eggplant (or you can do two pans) and lightly spray the eggplant with cooking spray and seasons with salt and pepper. Bake everything for 20 minutes.
Remove chicken from pan and set aside, stir eggplant and put back in the over for 10 more minutes or until browned.
Serve chicken with eggplant and drizzle with buffalo and ranch and enjoy.
