Mango kadhi with leftover mango
I wanted to try this unique kadhi recipe also known as fajeto . Saw this last year on Instagram .
I didn’t follow any specific recipe here . All recipe had more jaggery and I wanted spicy version so I didn’t add lot of sugar as mangoes were already too sweet . You can taste and balance the sweetness and spicy according to your taste . I added some more chillies at the end too .
Ingredients
4-5 leftover mango seeds ( it was round 3/4 cup mango pulp)
2 cup of water
1-2 tbsb yoghurt
2 tbsb besan
Jaggery as per sweetness ( I added 2-3 spoon )
2-3 green chillies
2 generous pinch of turmeric
Salt as needed
1/2 small lemon juice ( around 1 tbsb ) you can adjust it too
1/2 tsp Kashmiri red chilli powder
Cilantro leaves
Tadka
Oil
1 tsp cumin seeds
1 sprig curry leaves
2 pinch of hing
2 Red chillies
Instructions
Squeeze the pulp out of the mangoes . Add besan and yoghurt . Mix it well . Add water and mix . Strain the mixture to make it smooth . I was using honey mangoes and it has some threads on mango seeds .
Heat the mixture and add all spices and green chillies
Heat it till you get desired consistency . I boiled it for good 10 mins . Add jaggery as peer taste . I added only 2-3 spoons .
Add tadka and then lemon juice
I tried with rice and loved the flavours .
