ingredients:
- 1 shallot
- 2 sticks of unsalted butter / 225g
- 2 tbsp lemon juice / 28g
- 2 tbsp soju unflavored / 28g
- kosher salt to taste
- black peppercorn to taste
method:
add chopped shallot, soju, lemon juice and black peppercorn to pan and reduce until liquid almost evaporated
keep pan warm and slowly add butter cubes a little at a time and whisk until emulsified then add salt to taste and strain
serve warm over whatever meat or vegetables you like
