Taro Root or Arbi or even known as colocasia, can give you an Itch if chopped dry. A quick way is to give it a whistle in a pressure cooker and fasten the cooking process.
Ingredients:
•Arbi 500gms
•1/4th cup Mustard Oil
•1 lengthwise chopped onion
•1 lengthwise chopped tomato
•1 Tsp minced garlic
•1 Tsp ginger
•1 Tsp cumin
•1 Tsp Mustard seeds
•curry leaves
•juice of a lemon
Spices
•salt to taste
•1 Tsp chilli powder
•1 Tsp Corriander powder
•1/2 Tsp pepper
•1 Tsp Turmeric
Method: Wash & pressure cook Arbi with 2 cups of water. Peel the skin and chop. Heat Oil, add ginger, garlic, cumin & mustard seeds. Let it crackle and then sautee onions, tomato, curry leaves with all spices. Add 1/4th cup of water and cook it further until the masala thickens and separates oil. Now add chopped Arbi, sautéed, cover & cook on low flame for 6-7minutes. Add lemon juice, mix and is ready to be grubbed with some roti or bakhri.
