This is how you make restaurant-style fish with delicious crispy skin at home.
1. Get a pan heating on medium-high, and once it's hot add some oil and a pad of butter.
2. Salt and pepper both sides of your fish (whatever kind you like best) and carefully place it skin-side down in the pan.
3. Carefully keep the fish flat using your hands or a spatula.
4. Add a clove of garlic (skin on), and a bunch of cilantro, while continuing to gently press on your fish.
5. Tilt your pan and start basting, infusing the fish with flavor.
6. After about 3 minutes, remove your fish from the pan and (optional) make your puree by combining roasted peppers, cold butter, olive oil, chicken stock, and spices in a blender and pureeing until smooth.
7. Add your puree to a plate, place your fish on top, and drizzle the oil from the pan right on top for extra flavor.
No need to pay an arm and a leg for restaurant-style fish anymore. Now you can do it right at home.
