Masala Bhindi is a flavourful made with tender okra sautéed in a blend of aromatic spices
Ingredients:
• 2 packs of frozen Shana Bhindi sliced rings (each pack 900g).. you can use fresh bhindi
• 1/3 to 1/2 cup of oil
• 1 teaspoon cumin seeds
• 1 tablespoon ginger garlic paste
• 2 medium to large onions, finely sliced
• 3-4 medium tomatoes, roughly chopped
• 1 teaspoon salt
• 1 teaspoon red chilly powder
• 1 teaspoon coriander powder
• 1/2 teaspoon turmeric powder
• Green chillies
• 1/4 cup yogurt
• 1/2 teaspoon coriander powder at the end for that extra touch to it
Instructions:
1. Start by deep-frying the bhindi until its stickiness is gone. If using frozen Shana Bhindi, you can thaw it first, and then fry it until it’s crisp. Place the fried bhindi on a dish lined with paper towels to absorb excess oil.
2. In a pot, add 1/3 to 1/2 cup of oil. Heat the oil slightly, and then add 1 teaspoon of cumin seeds. Let them sizzle for a few seconds.
3. Add 1 tablespoon of ginger garlic paste and sauté for a little while until the raw smell disappears.
4. Add 2 medium to large onions that have been finely sliced. Cook them until they become translucent.
5. Add the roughly chopped 3-4 medium tomatoes to the pot. Cover and cook until the tomatoes become tender.
6. Now, add the following spices: 1 teaspoon salt, 1 teaspoon red chilly powder, 1 teaspoon coriander powder, and 1/2 teaspoon turmeric powder. Mix well and cook until the oil starts to separate from the mixture.
7. Add a few green chilies and 1/4 cup of yogurt to the pot. Mix well and continue to cook until the oil separates again.
8. Add in the fried bhindi and mix it well with the spice mixture. Cover and cook until everything is well incorporated, and the flavors are well combined.
9. Finally, sprinkle 1/2 teaspoon of coriander powder on top, turn off the stove, and your “Mazaydar Restaurant Style Masala Bhindi” is ready.
10. Serve it hot with roti or nan and enjoy your delicious homemade meal.
