Homemade Cream Cheese
Ingredients:
1 liter full-fat milk
1/2 cup Cream
2 tablespoons white vinegar or lemon juice
¼ tsp salt (optional)
1 tbsp heavy cream (optional, for extra creaminess
1 Cheese cube
Instructions:
1. Pour the milk and cream into a saucepan and heat it over medium heat until it starts steaming (not boiling).
2. Add lemon juice and stir gently. The milk will start to curdle. Turn off the heat and let it sit for 5–10 minutes.
3. Line a strainer with a cheesecloth or a clean kitchen towel. Pour the curdled mixture into the strainer and let the whey drain out for about 15–20 minutes.
Wash the curdled mixture twice to remove the lemon smell.
4.Transfer the curds to a blender or food processor. Add salt and heavy cream (if using) cheese cube and blend until smooth and creamy.
5. Transfer the cream cheese to a container and refrigerate it to set.
6.Store the cream cheese in an airtight container in the fridge for up to a week.

Spread on toast or bagels
Make cheesecake
Use in dips and sauces
Stuff into vegetables
Add to baking recipes
