I knew I wanted to cook something sweet and healthy on the first day of this year and I keep going back to this recipe during winters for all the right reasons. I really hope you and your family enjoy making this at home, happy 2024 ❤️

Here's how you can make this recipe at home ☺️

Ingredients:
2 cups grated winter carrots
1 Tbsp ghee
2 Tbsps dry fruit
12-15 dates- soaked in hot water and ground
Pinch of saffron with warm milk
1.5 cups milk
100g Khoya
1/4th tsp cardamom powder

Process:
- Grate the carrots, chop the dry fruits (cashews and almonds) and soak the dates in hot water
- Start by roasting the dry fruit in ghee until it is golden brown - take them out of the heat
- Add the carrots in the same pan and cook for 5-6 minutes until soft
- Blend the dates with some of the hot water until you have a smooth paste
- After cooking the carrots, add the milk a little bit at a time and cook until most of the milk is absorbed
- Add the date paste and mix well
- Turn the heat off and finish with crumbled khoya, saffron milk and cardamom powder
- Add in the nuts, serve hot and enjoy!
